I don't want to be the rainmaker here but do not rule out the possibility of
a two other options;
Blown head gasket or a ruptured heater hose. Your exact conditions
replicated on my Landcruiser (ruptured heater hose) and my Lexus (blown head gasket).

Hi Markus,
thanks for your help, I also noticed a whining noise which wasn't there
before, another forum suggested it may be a water pump bearing. I'm not
sure what units the temp guage is in, can't remember if it says C or F,
either way it was reading at the bottom end of the guage and was nowhere
near the red area, could also have a faulty sensor then as its not
reading 80 which i think is normal, will double check my guages and see
if its C or F,

this is out of left field...i had a noise that was kind of winny and clanky
it was the alternator.

Welcome Oisin.
That sure sounds like your thermostat is firmly stuck in the closed
position where you are only reading a temp of 40-50 C. Do not drive
the car to your mechanic until you do the following. With engine cold,
remove the bolts securing the upper radiator hose fitting to the water
pump. Now remove the thermostat, keeping the rubber seal. Replace the
rubber seal followed by the upper hose fitting and bolts. Replenish the
coolant level and drive to your mechanic.
Or purchase the correct thermostat and new seal for the car and do this
job your self in 15 minutes simply replacing the thermostat and noting
that the little weep hole in the thermostat rim (flange) should be
located at the highest point of the engine. Your choice. Either way
when done have a pint of Harp on me.

I also tried to send 3 photos from the meet but it said it was too big as
