I did the same thing with parts from Rusty a couple of years ago and it
still looks good. I used the old liner to cover the engine and was
careful not to get any gunk on the fenders.

My 2 cents. This is not a job to be taken lightly and there are many
failure stories on Mercedes Forum. A experienced friend helped me with
my smaller 380SL and like Dick states below a tarp is a must. A throw
away tarp from a paint store is good, I think we used a 10' x 10'. My
friend convinced me you must scrape all of the old residue and adhesive
off of the hood as you want a clean surface to start with. I believe we
used an adhesive remover and it was a hard, messy job. What was so
important was letting the adhesive cure for the full time recommended in
the instructions on the can before placing the pad to the hood, in my
case it was 10 minutes and my friend actually had us walk across the
street to get a coke just to be sure we waited long enough. The adhesive
I used applied to both the pad and the hood surface and we used the
entire can. It was definitely a two person project and turned out
beautifully.

Adhesive $15-18 for a can.
You should be able to scrape clear the old material leaving the original
adhesive bead if it's not flaking off easily and just apply the new
adhesive to the under hood region and the foam backing before applying.
Test fit the new piece first so you know where the marks are for
centering. When setting in place, work from the center outward as you
press in place. I'd recommend you tarp the entire engine bay, fenders,
front bumper and windscreen to avoid overspray.
