[W126 Coupe] Catalytic Converter questions

So without cats these cars won't pass an emissions test? I thought they burned clean enough that they could barely get by without cats.

It will improve performance and I would wager longevity of your
engine.  Was your Euro federalized when it came over?  Regardless, my
SEL felt great sans cats.  I hollowed out each so it would look
correct for a visual inspection.  As long as you don't have emissions
testing you should be fine!
