You did not indicate the health of the cooling system prior to the gauge work.  Was it running at the right operating temperature with and without AC compressor engaged prior to the needle thing???

Either way the IR meter will tell you the actual temp at the tstat and can also be used to measure the effectiveness of the radiator by zone if you aim carefully.  So, it will pick up a bad area in the radiator if one exists.
