[W126 Coupe] OVER HEAT QUESTION

hi all i have a 85 500 sec
 and with the air on and electrical fan on after a short while of  driving  
the temp gauge  goes to and slightly past the third line  of the temp gauge( 
when it does this i turn off the air and worry) it comes  back down to  approx  
less than half way  between the second line  (normal?)??? ... now here is the 
kicker ( oh boy) the gauges were repaired  needeles removed( by a person who 
shall remain nameless)  and may not  be in the correct locations .... so i dont 
know it the engine is actually  getting wayyy too hot  how do i know if it is 
a clogged rad or a bad fan  clutch or nothing
how do i figgure this out????
