Our world has changed, "Change" being the operative verb, but I believe that you are entitled to reimbursement for your actual cash value loss. If the insurance adjuster can replace your 1991 560 SEC with another like kind i.e.: 94K, color, wear and tear, etc. much like what you had and he can get for you for $7800 (including taxes, license and any other expenses) you probably have no option but to accept his offer. On the other hand, if he can't do that, you have a valid argument that can be taken into mediation. My 87 560 SEC has 205k, upholstery is worn, needs two tires, inexpensive wheels, a nice but aging black paint job and I'm not selling mine for a lousy $7800 unless I can buy something just as nice if not better for $7800. If you are not happy with the offer take it to mediation prepared with your argument and you should win if the facts support your argument.

Here's the problem - the price on our cars has tanked big time. I don't know of many in the 5 figures anymore, no matter what the book says. One of the reasons I have agreed to value on mine. Anyhow, I'd suggest trolling recent sales on ebay, ads on hemmings, autotrader, etc. Keep in mind, asking prices aren't indicative of actual value or selling prices.

Unfortunately you are the second person in the past 2 days I've heard being hit in their low mileage prized SEC.
