I agree with Markus, you might also considering changing all the belts and hoses, which I do when picking up a used vehicle. Kind of gets you at a good staring point. The issues you currently have, usually lie in one on the components that require changing. You might want to consider changing the plugs,wires,cap and rotor and throw a set of brushes in the alternator.

Now, on to your car. If you don't know the service history, the first thing I'd do is:
1) change all fluids (engine oil, trans oil, rear diff, brake, power steering, hydraulic suspension, coolant)
2) change all filters (oil, trans, power steering, hydraulic, fuel)
3) change all fuses
That will start you off on a good foot and eliminate any of those areas as possible problems. Many times if a car has sat you'll run into issues like you describe, or if regular service wasn't done, etc.
I'd do those things and see how it runs/handles afterwards. If still have the same issues, then on to the next step of things to check...

Anyway...............
My 91 SEC with 91,000 miles lags with a quick push of accelerator and almost cuts off when leaving a red light but takes off normally if the accelerator is pushed slowly.
This started a couple of days ago and it is slightly irregular at idle also.
There have been no changes in gas etc...
The first thing that comes to my mind is dirt? in a gas filter. I put some gas cleaner in yesterday.
I bought the car 6 months ago so I'm not sure when specific maintenance was performed i.e..plugs etc....
Any other ideas experts?
