I have a perfect Exhaust system and last year from time to time the car
would jump to 1500 RPMS for no apparent reason.

I ended up replacing a control unit that handles this (can't remember the
name of it, but costs about EUR 140-- used). There was a huge burned
section of the circuit board. There was an article about sometimes the
solder joints being cold, but I waited too long.

Then I had a problem with it stalling out at intersections. They cleaned
the "Massenteiler" as it was injecting too much fuel into the cylinders.
Car is completely in order now.

There is also a valve that from time to time needs to be cleaned (the
rubber seals die). These both helped.
