[W126 Coupe] Running Hot update

Not sure what the problem is.  You say your temp stays at 88 - 90 C while driving around but drops to 85 when you "hammer" it.  What is your thermostat temperature rating?  
 
I forget what engine you have but the standard thermostat on the 380SEC (for instance) is rated at 84C. (116 200 02 15)  Bear in mind that the temperature gauges in the MB are not exactly calibrated to scientific medical standards, nor are thermostats manufactured within fractional degree range accuracy. 
 
When accelerating uphill under load, you expect the temperature to raise, maybe even to 100C.  When you subsequently coast downhill at 130 KPH you expect the temperature to drop, maybe to 80C or lower.  But the temperature always recovers quickly as the thermostat adjusts.  IF your gauge reads the other way around, or your temperature readings jump quickly all over the place, your gauge is likely toast.
 
Under normal use, at normal operating temperature, you should find your top hose a bit too hot to keep your hand on it;  your lower hose should be warm but not uncomfortable to grasp and hold.  It shouldn't matter if you live in Texas or North Dakota.   
 
The only other unusual condition that I have seen is an old spongy radiator hose collapsing and restricting the coolant flow. I'm not saying that it can't happen, but I have never seen it with a Mercedes Benz hose.  
 
But what you are now describing doesn't sound like anything extraordinary.
