[W126 Coupe] Engine vacuum oddity

The only connection I can envision is the alternator. High speed fan is a
very large electrical load and either the fan is going bad, pulling huge
amounts of current thereby loading down the alternator, or the alternator is
going bad and that big load makes it work way too hard, trying to slow down
the engine, thereby affecting vacuum levels. Check voltage on the alternator
during different conditions.

Actually, I first noticed this with the windows open, so that's not it.

Do you suppose that cabin pressure has something to do with this? Why don't
you try it with a window open to see if it still happens.
