I think you're better off just supercharging the 500 and adding a methanol water injection a la Jim Nowak. The 500 to 560 swap would entail replacing just about anything that has anything to do with the engine (motor, ignition, injection, exhaust, intake, computer, I'm sure I'm forgetting something), but with a euro 500 you already run 247hp, and with 12psi you'd run around 440hp...though you may want to fire ring the head gasket first. Heck, running 6psi would give you 340 and I don't think you would need to fire ring the head gasket nor run the methanol water injection with such low boost.

RKS:
That makes me wonder how much of an improvement one can get just by improving the airflow to the air filter. I note that although the 560 air filter is largish, the rear stays very clean as there is no air flow (the fuel distributor is in the way and there is next to no clearance between the rear of the air filter and the cowling).

In other cars that I've owned, cheap and common and so can be modified with impunity, I've just hacked the front of the air filter housing off and they always run noticeably better (no snorkel).

The most obvious change that one can make is to replace the regular air filter with a higher performance free flowing one. I note that race cars don't worry about air snorkels but simply have the entire air filter exposed (I've notice this in Australian V8 racing cars).

I've been thinking about testing the idea by taking the compression at, say, 2,000RPM with and without the air filter to see what the difference is. Of course there is some air pressure from wind when the car is moving.
