I need to top off the hydraulic self-leveling system on my 89 560 SEC.
Previously, I had used MBZ fluid, but I had to order it and it took several
days. Is there an alternative I can use that can be found at a local auto
parts store? There is a leak somewhere in the system that I need to find.
It works great, but just loses fluid over time. I believe It could be the
hose at the bottom of the reservoir under the hood.

I guess you could find an aftermarket hydraulic fluid that will work in
the hydro suspension but I'm not sure it is a good idea.
The fluid that MB uses is most likely controlled for purity. Excess sulphur
and or acid in aftermarket fluids could ruin the pump or level control
valve.
Good question, though.
The MB dealers that I have access to stock this fluid. Have you tried a
dealer?
