[W126 Coupe] Catalytic Converter questions

Hi there..I have a 560SEC with Euro motor

Can you remove the Cats and replace with straight pipe, or cut the guts out of the Cats leaving them to look normal, without having a detrimental effect on performance or longevity ??

Would there be a noticeable difference in smell ?
