I'm running a 3.27 diff with my 6.0 32v. It has limited-slip and is from a euro 380SL as far as I know. The original Gleason-Torsen was toast. Highway cruising is definitely "fun" I would say. Blasts from 60-80 and quick passes and merges are amazing. I have no problems with having to fill up more frequently as the car only gets 3-4 days/month of driving and that's in the cool months. I put in a half a tank per fill so I can keep the gas fresh. As daily driver I wouldn't recommend it. I had a 2.82 when I had the euro 560 motor and that was a perfect compromise for being a daily driver.
