[W126 Coupe] Summer starting?

This sounds like a fuel issue. As I just went through this with my car, pull the fuel relay and jump contacts 7 and 8. This will run the fuel pumps all the time. Try to start the engine. If it is OK, its your fuel pump relay. If not, check that BOTH fuel pumps are running. Do this with a piece of 1/2" dowel or metal rod long enough to put one end on the pump and the other to your ear. DO NOT force though your ear. LISTEN to the pumps. Next get a fuel pressure check kit and check the fuel pressure. Should be 6.2 - 6.4 bar running and stay at 3 bar for 30 minutes after shut off.

My 560sel has developed the same problem this summer and it doesn't seem to be related to the AC.
My problem started after replacing the fuel filter. I was thinking that either the pumps were going out or that there is a vapor lock in the new fuel filter.
  Any thoughts?

The SEC has had a starting problem the last couple of weeks and it's been getting a little worse each week.

If it's cold, if fires RIGHT up. If it's been driven a while, up to normal temperature, it seems to not like the next start - starts, stumbles, maybe runs, no power and when it's put in gear it stumbles, quits, then may or may not start. If the car is in a garage/parking structure, it has restarted fairly easily. I rev it a couple of tims, then put it in gear and drive away. Park the hot car in the hot sun, even under the car cover and 1. it fires up but stumbles, quits, then won't start for a while or 2. it might not start at all, just crank. Several times it fired right up but had no power - putting it in gear and it stumbles and quits, then it's VERY difficult to start. Today I tried to listen for the fuel pumps but no noise.

This didn't seem to happen until I fixed the A/C and now that the A/C is cold, the car has this problem. Might be coincidence.

Vapor lock or fuel pumps? Which direction should I go in troubleshooting??
