Yes, I definitely think you should get a second opinion.
The valves and injectors wear out. From what I have heard, the injectors are
probably due for a change at about 150k miles and the valve seals at about
the same mileage. At about 175-200k miles, your engine probably will need a
complete head job.
However, the injectors and valves tell you when they are tired. They are not
like the timing chain, which can fail suddenly and catastrophically. If the
injectors are worn they can no longer hold pressure properly and you'll have
hesitation when accelerating and probably some hard start problems. If you
experience any of these symptoms, your first stop should be a can of Techron
fuel injector cleaner in 1/2 tank of gas. That will clean them right up. If
you still have problems, you may want to have the injectors replaced.
Problems with the valves has a number of symptoms, some of them similar to
bad injectors; the engine will be a bit "rough" and "agricultural", you may
even hear some "tapping" beneath the valve covers.
If your car runs smoothly and accelerates without hesitation, I'd get a
second opinion on what is needed.
....and $5,000 is definitely too high a price for the work you listed.
