[W126 Coupe] would anybody be interested in big brakes?

Steve is right. I've always been amazed at the stopping power of the pure stock setup on the later model 126's. That's a lot of weight to slow down. But everything must be in good working order. Swelling brake hoses will give a soft pedal feel. Most important is to have the right combination of pads and rotors. OEM pads are made to be effective with only OEM discs and vice versa. If you must "upgrade", change both pads and rotors to a combination that are made to work together. Failure to observe this basic rule will often result in warped or glazed rotors, glazed or overworn pads, and generally poor brake performance.

Could old hoses cause soft pedal feel? It seems like I have to push the pedal more than I would like before the brakes start doing any real grabbing, even though the fluid level is proper and there are no leaks and the master cylinder is good.

Richard, if your brake hoses have not been replaced, they are way
overdue. Replace the hoses, put stock OEM (like Textar) pads on, flush
the system, restore with fresh Dot 4+ fluid, and pressure bleed. If
your master cylinder is good and you have no wheel cylinder leaks, when
you hit the brakes, it should suck your eyes out and your ABS should
shudder away. You are crazy thinking you need to spend $2000 on your
brakes to make them work right.
