I got 6 Polaroid 8 x 10 holders with me,
for 6 different images no testshoots,
and I develop them all at home or the hotel.
It's not difficult, but cost intensive. If you
see then the result, your heart will be open
for the next shoots.
Better for enlargements is color negative film
Kodak  Portra 160 VC.

It would definitely be nice to have extra Polaroid holders, but as you aptly 
point out, very cost intensive.  Since I'm just doing this for fun, I can't 
really justify the cost; there are many other things I rather spend that 
money on.

WRT to Portra, certainly that or NPS would be better for color enlargements, 
but I use the Polaroid for image transfers, which requires a positive image. 
  For those on this list unfamiliar with image transfers...

It's the process by which you expose color Polaroid film, either in camera 
or from an enlarged transparency, then partially process the print.  After 
the print processes for just 10 or so seconds the negative is seperated from 
the print and quickly placed on top of a "receptor."  The receptor is 
usually paper and its usually wet, but it can be other things like wood, 
etc.  After a certain amount of time passes, the negative is carefully 
pulled away, leaving a positive image on the receptor.  The process is wide 
open to any number of variations, but that's the basis.  Each one is unique 
and with certain images it takes on the look of a painting.  Most people 
that see them and don't know what they are, think they are paintings.  I 
uploaded one of my 8x10 transfers to the f32 site, so you can see what 
they're like once they become available.
