Carol,
On Toolbar at top of Word - Insert, Date and Time - will open a menu =
that has a checkbox that says "update automatically".  Uncheck it.

Another potential problem is mentioned in Word Help:
Update fields to display the latest information
If new information becomes available, you can update a field to produce =
new field results.=20

  a.. To update a single field, click the field or the field results, =
and then press F9.=20
  To update all fields in a document, click Select All on the Edit menu, =
and then press F9.=20

Tip   You can update all fields in a document each time you print it. =
Click Options on the Tools menu, click the Print tab, and then select =
the Update fields check box.
